Healthy Cooking Recipe

This healthy cooking recipe is VERY simple to throw together. Experiment with different vegetable combinations to customize this healthy cooking recipe for your family.

Busy moms can easily prepare it a day before and keep it in the refrigerator. Put it in the oven 3-4 hours before lunch or dinner.

Erika's Very Easy to Prepare Healthy Chicken and Veg.

Ingredients

1 whole chicken

1 onion and/or leek - sliced or cubed

1-2 sweet potato - cut into 4

2-4 carrots - cut into large sections

2-4 medium potatoes - peeled and cut in half

2-4 zucchinis - cut into large sections

4 garlic cloves - peeled

Extra virgin olive oil

Dash of thyme - to taste

Dash of black pepper - to taste

Method

In a large baking pot with a lid (with handle that won't melt!) arrange sliced onion and or leek on the bottom.

Place whole fresh or defrosted chicken in pot. Tuck garlic cloves inside chicken, under wings etc.

Arrange different cut vegetables around the chicken.

Drizzle with olive oil and dust with thyme and black pepper.

Cover pot with lid and bake in extra hot oven (400 F or 230 C) for 3-4 hours.

Natural juices and flavors will seep from the chicken and vegetables and fill your home with delicious smells!

Serve hot with brown rice, couscous, or fresh whole grain bread.
